Quick & Easy Vegan Broccoli Soup

Vegan, Gluten-Free, Dairy-Free, Soy-Free, Sugar-Free.

A creamy, inexpensive, easy and quick vegan soup that is packed with so much flavor that you’ll forget it’s just broccoli. Great as an appetizer or on its own anytime of day. 

Ingredients: 

  • 3 broccoli florets, chopped 
  • 3 tablespoons olive oil 
  • 1 sweet onion, chopped 
  • 4 cups vegetable stock 
  • 1 ½ cups unsweetened almond milk 
  • Salt and pepper to taste

Garnish options: 

  • Vegan cheese (recommended: parm, blue cheese) 

Directions: 

  1. Heat olive oil in a large pot and sauté onions until translucent. 
  2. Add the vegetable stock, chopped broccoli and bring to a boil. Simmer for 20 minutes or until broccoli is tender. 
  3. Turn down heat, blend with an immersion blender until puréed or transfer soup to a blender to purée. Then, add the soup back to the pot.
  4. Add the milk (to your desired consistency), salt, and pepper to taste and stir to combine. 
  5. Enjoy!
